Castello Blue & Cabernet Sauvignon
Hello All,
Today my friend treated me to a cheese called Blue Castello. Blue Castello is a triple-cream blue cow cheese from Denmark. The cheese is soft (scoopable) right out the wrapper. The cheese has a spicy flavor and reminds me of Brie.
I had a bottle of Bin 45 Cabernet Sauvignon on hand so I decided to pair the cheese with this easy drinking red. Bin 45 has subtle hints of cherries and blueberries and when paired with Castello Blue it really brings out the taste of the cheese. Actually, I’d describe it more as a symphony in your mouth (at least in mine). The Castello Blue attacks in the mouth and the Bin 45 balances it out. I highly recommend this pairing.
